Fish TacosDIRECTIONS

Season fish with cumin, garlic salt and chili powder.
Grill or broil fish 3-5 minutes each side or until fish flakes easily.
Heat olive oil in saucepan over medium heat.
Add minced garlic, red pepper and onion and sauté about 3 minutes.

Tuna CakesDIRECTIONS:

1. Drain tuna and put into large bowl
2. Add egg, pepper, cucumber, onion, Essence and ¼ c. of the breadcrumbs
3. Combine ingredients well and form into 6 patties (about 4 inch diameter)
4.Lightly coat skillet with non-stick cooking spray or olive oil.

Salmon w Strawberry and Mango SalsaDIRECTIONS:
1. Preheat grill to medium heat.
2.Brush both sides of the salmon with the olive oil.
3. Season fish with salt, black pepper, onion powder and cayenne pepper. Place the fish meat side down on grill for three minutes.

Shrimp and Tabbouleh SaladDIRECTIONS:

1. Place bulgur in a large bowl, and pour the boiling water and olive oil over it. Stir, cover, and let stand for 15 to 20 minutes or until water is absorbed.
2. Heat 1 tbsp olive oil in skillet over medium heat. Add garlic and sauté for 1 minute.
3. Add shrimp and cook 4-6 minutes or until pink and firm. Set aside.
